James and Sophie Summerlin make Stanage Millstone by hand on their small hill farm in the shadows of Stanage Edge on the edge of Sheffield in the Peak District. It is shaped to mimic the large stone millstones left abandoned on and around Stanage and also used to promote the beautiful Peak District National Park.
Cheesemaking is an ever changing science as the milk changes through the year and many many variables affect each small hand made batch.
Stanage Millstone is a creamy and buttery soft bloomy rind cheese. We have been working on the rind development, to encourage more yeasts to flourish giving a more complex flavour without bringing any overly intense, bitter flavours. It looks great on a cheeseboard, or on top of a wedding cake, but also bakes very successfully, and melts beautifully. See our recipe pages for ideas.
